Preheat oven to 375F. Mix eggs, milk, butter and vanilla until well combined. Add muffin mix and continue
mixing until all batter is moist (it will be thicker than a wheat based muffin mix). Pour into greased or
paper lined muffin pan and bake for 15 to 20 minutes or until golden brown.
Yield: 12 standard size muffins
